farinata

a typical ligurian dish that will drive everyone crazy! also perfect in sandwiches or piadina.

ingredients


  • chickpea flour: 200g
  • salt: 1 tablespoon
  • water: 600g
  • oil: 4 tablespoons
  • rosemary for garnish

procedure

  1. mix well the chickpea flour and the salt.

  2. slowly add the water while stirring.

  3. add the oil and mix well.

  4. if you have time, let it rest for an hour (not necessary).

  5. if there is some foam on your batter, remove it with a spoon.

  6. transfer the mixture into a large baking pan, it should remain quite thin.

  7. in a ventilated oven at 250°C for 25 minutes - et voila!

to get the crust, bake it for the first 15 minutes in the lowest shelf of the oven and for the last 10 in the highest one.
