summer cous cous

a very versatile dish to refresh during these hot summer days! here we provide only one possible version but you can change and mix it up as you like and depending what you have in your fridge.

quantities for about 2 portions

ingredients


for the cous cous:

  • cous cous: 100g
  • paprika: 1 tsp
  • curry: 1/2 tsp
  • turmeric: 1/2 tsp
  • salt: 1/2 tsp

for the condiments:

  • tomatoes: 1 big /2 small
  • cucumber: 1
  • carrot: 1
  • zucchini: 1
  • beans of choice: 240g
  • salt
  • lemon: juice of half
  • olive oil
  • basil (optional)
  • garlic powder (optional)

in this recipe i’ve used spanish white beans but you can use whatever you like

i’ve used a yellow zucchini because i had it in my fridge but any will do

this recipe is very flexible, if there’s something you don’t like just opt it out or substitute it

procedure


  1. start by mixing the spices and salt with the cous cous.

  2. once it’s ready, cover the cous cous with the same amount of hot water (100g), the ratio should be 1:1 and the water should just cover the cous cous. this step is crucial because if you add too much water it will come out soggy.

  3. cover the cous cous with a cotton cloth and let it rest for 5-7 minutes while you get started on the rest.

  4. chop your zucchini and carrot and sauté them for a couple minutes in a pan with some olive oil until they soften just a little bit. you can opt this step out since both these vegetables are very good raw as well.

  5. by now your cous cous should be ready so you can gently move it around with a fork, allowing the grains to separate and stay puffy.

  6. now chop the rest of your vegetables and drain and wash your beans.

  7. add everything to a bowl, mix it gently and add the basil, oil, salt and lemon juice. adjust the spices and salt as you like!

  8. serve it cool and enjoy anywhere you are vacaying (hopefully)!
